A broccoli soup with arugula

The recipe is for two servings.

- 2 and a half cups of distilled water;

- 1 head of broccoli, sliced;

- a 1\2 of onion diced;

- 3\4 cups of sliced arugula;

- 1 garlic clove, finely chopped;

- a 1\4 teaspoon of coarse salt and black pepper;

- 1 tablespoon of olive oil;

- 1\5 of a lemon.

Heat the olive oil in a medium saucepan on a medium fire. Add garlic and onion, and fry for a minute or until it’s fragrant comes out. Add broccoli and cook for four minutes or until it becomes bright green. Add water, salt and pepper, boil everything, and reduce heat, and then cover the saucepan with a lid. Cook for another 8 minutes. Pour the soup into a blender and puree it with arugula, until the mixture is smooth. Be very careful when blending hot liquids: start on slow speed. Before serving, sprinkle the dish with several drops of lemon juice.

Steamed salmon with vegetables. One portion.

- salmon fillets, about 170 grams;

- your favorite greens (about ¼ cup, sliced);

- a slice of lemon;

- spinach and other green vegetables roughly chopped.

Steam salmon for 11 minutes. Prepare the vegetables and put them on a plate. Steam salmon for 7 minutes more, and then serve it, sprinkled with lemon and herbs.

A cucumber and avocado soup. Easy to cook, light and refreshing cold soup. One portion.

- 1 big cucumber, peeled and coarsely chopped;

- 1\2 avocado, peeled and coarsely chopped.

- juice of 1 lime;

- juice of half a lime;

- 1/2 teaspoon of salt.

Thoroughly mix everything in a blender to a puree condition. The soup is ready.

Chicken "Detox". A light and tasty dish. The sauce contains no sugar or soy. One serving.

- 1 tablespoon of distilled water;

- 1 chicken breast;

- 1 shallot, finely chopped;

- 4 sprigs of cilantro, coarsely chopped;

- 1\3 cup of balsamic vinegar;

- 1\3 cup of agave syrup;

- 1 teaspoon of miso;

- 1 teaspoon of grated fresh ginger;

- 1\4 teaspoon of freshly ground black pepper.

Mix the balsamic vinegar, agave syrup, ginger and pepper in a small saucepan. Let it boil and cook for 10 minutes. Cool it, and then add the miso and water.

Marinate the chicken in the sauce for at least an hour before cooking. Grill chicken for 3-4 minutes on the each side. Sprinkle with green onions and cilantro before serving.
